Belly
Fresh meat of the corresponding part of pork carcass, located on the abdomen and comprising a combination of muscle, bone and fatty tissues of the lateral abdominal region. In the upper part it is limited by a parallel incision along the spine 10-12 cm, depending on the pork’s size. A single piece, with ribs and skin, with a natural incision, remains pulpy during the separation of the brisket. Includes a part called the finite piece of ribs.
