Belly Bacon
Fresh meat of the corresponding part of the pork carcass is located on the stomach and includes a combination of muscle, bone and fatty tissues of the lateral abdominal area. In the upper part, it is limited by a parallel incision along the spine 10-12 cm from it, depending on the size of the pork. In the posterior part, it is limited by a perpendicular incision along the spinal column between the penultimate and the last lumbar vertebra. In front part it is limited by the area between the fourth and fifth edge. A single piece with ribs and skin, with a natural incision, remains pulpy with the separation of the brisket. It does not include the part called the finite piece of ribs.
